Low-Carb Breakfast Bars

1/2 cup Almond Flour
1/2 cup Wheat Bran
2 Tablespoons Coconut Flour
1/2 cup of Splenda
2 teaspoons baking powder
1/2 cup Organic Coconut
1/4 cup plus 2 Tablespoons Almonds (chopped)
1/4 plus 2 Tablespoons Pecans (chopped)
2 Tablespoons Mini Chocolate Chips
1/3 cup Cran-Cherries
1/2 cup Unsweetened Applesauce
2 Tablespoons Fruit Jam
1 teaspoon Vanilla Extract

Chop the nuts and cran-cherries and place in a bowl along with the remaining ingredients.  Stir until well blended.  Use an 8 1/2 x 8 1/2 baking dish and lightly spray it with a cooking spray.  Cut a thin piece of parchment paper to fold over one side of the dish.  This will make it easier to remove from the dish after it has cooked.  Spread the mixture in the pan and bake on 350 degrees for 25-30 minutes.  Insert a fork or tooth pick to makes sure the center is done.  After they have cooled, cut into 12 pieces or smaller if you want.

1 bar equals 9 carbs and 85 calories

Thanks Dawn, they are good, it takes a little getting use to because they are not your average sweet breakfast bar. They sure are healthy though.
